CINNAMON ROLL MUFFIN

This cinnamon roll muffin is similar in many ways to your classic cinnamon roll, but gets ready in way less time. It is super simple to make, requires no yeast and is awesomely delicious.

I learnt this recipe from my mum. She was such a busy woman whose dedication to her family saw her in charge of kitchen duties regardless of how busy she was. These cinnamon roll muffins were one of her favourite recipes to make, especially on Christmas mornings. Instead of the cinnamon rolls which need yeast, rise periods, and rolling pins, she would make these Cinnamon Roll Muffins.

They take way less time to make, and still produce the same delicious delightfulness as traditional cinnamon rolls. I guarantee you’ll enjoy this! Cinnamon roll muffin recipe can be served as a side dish or as an appetizer. You can serve cinnamon roll muffins at your kid’s party or just a snaky treat in the home.

Ingredients

2 cups all-purpose flour

3 teaspoons baking powder

½ teaspoon salt

¼ cup sugar

3 tablespoons melted butter, cooled slightly

1 egg

1 cup milk

For the Filling:

1 cup brown sugar, loosely packed

3 teaspoons ground cinnamon

1 ½ cups coarsely chopped pecans or walnuts

3 tablespoons melted butter

For the Frosting:

2 ounces cream cheese, softened

1 cup powdered sugar

1 tablespoon milk

Dash of vanilla

 

Cooking Instructions

Step 1:

Preheat oven to 400 degrees Fahrenheit and grease the 12 cup muffin tin generously. Then sift together the dry ingredients (flour, baking powder, salt, and sugar) in a large bowl. Also whisk together the wet ingredients (melted butter, egg, milk) in a separate bowl until they are well combined.

Step 2:

In the center of the flour mixture, make a hole and add the egg mixture, then stir when it is combined. Add all the all the filling ingredients together and fold half of the mixture gently into the muffin batter.

Step 3:

Put the muffin batter, a little less than ¼ cup using a spoon into each muffin tin and top with the remaining brown sugar mixture. Allow to bake at 400 degrees Fahrenheit for about 12 to 15 minutes, or until muffins bounces when touched.

Step 4:

Remove from oven and let it cool slightly, then transfer to a wire rack. To make the frosting, whisk together all of the frosting ingredients and spray over the top of the muffins.

Step 5:

Serve and enjoy every single delicious bite.
